4-204.112 (B-C): (B) Except as specified in¶(C) of this section, cold or hot holding EQUIPMENT used for TIME/TEMPERATURE CONTROL FOR SAFETY FOOD shall be designed to include and shall be equipped with at least one integral or permanently affixed TEMPERATURE MEASURING DEVICE that is located to allow easy viewing of the device's temperature display. 4-204.112 Temperature Measuring Devices.(C) Paragraph (B) of this section does not apply to EQUIPMENTfor which the placement of a TEMPERATURE MEASURING DEVICE is not a practical means for measuring the ambient air surrounding the FOOD because of the design, type, and use of the EQUIPMENT, such as calrod units, heat lamps, cold plates, bainmaries, steam tables, insulated FOOD transport containers, and salad bars. Not all cold holding equipment has ambient air thermometers. Provide thermometers for all cold holding equipment and maintain by the next routine inspection. |

THE FOLLOWING WAS DISCUSSED AT THIS PREOPENING INSPECTION:
-ALL EQUIPMENT IS IN PLACE AND PROPERLY FUNCTIONING. -A COPY OF THE MENU WILL BE EMAILED TO KCHD. -FOOD THERMOMETERS, CHLORINE SANITIZER, CHLORINE TEST STRIPS, AND A BODILY FLUIDS CLEAN UP KIT ARE ALL ON SITE. -GREG HAS CFPM AND ALLERGEN AWARENESS CERTIFICATIONS. HAVE NEW EMPLOYEES SIGN 1B FORMS AND COMPLETE FOOD HANDLER TRAINING WITHIN 30 DAYS OF HIRE. -THE REQUIRED ILLINOIS ALLERGEN POSTING AND REQUIREMENTS FOR ALLERGEN NOTIFICATION WERE DISCUSSED AND WILL BE REVIEWED AT THE NEXT ROUTINE INSPECTION. THIS ESTABLISHMENT IS PERMITTED TO OPERATE AS A HIGH RISK FACILITY PER THE AUTHORITY OF THE KANKAKEE COUNTY HEALTH DEPARTMENT. A ROUTINE INSPECTION WILL OCCUR IN ABOUT 30 DAYS. |
